Genie's Dream Royal Icing Recipe

Whisk together until frothy:

  • 1/3 cup* of Genie's Dream Meringue Powder
  • 1/2 cup water
  • 1-2 tsp of your favorite flavoring

Using your mixer's paddle attachment, slowly add:

  • 2 lbs powdered sugar
  • 1 Tbsp light corn syrup

Continue to mix for 3 minutes on medium to medium-high. Your icing will start to turn white and have a fluffy look. Please do NOT overmix. Overmixing can cause icing to become unstable. This recipe will produce a VERY STIFF icing. To thin, add small amounts of water at a time until you reach your desired consistency.

*Notes:

  • This recipe is a great starting point that produces a VERY THICK icing. To thin, add a teaspoon of water at a time until you reach your desired consistency.
  • If you find the finished royal icing dries too hard for your liking, try using 1/4 cup of Genie's Dream Meringue Powder.
