Red Velvet Rollout Cookies

Cream together: 

  • 2 sticks of butter
  • 4 oz (1/2 block) cream cheese 
  • 1 cup sugar 

Add in:

  • 1 egg 
  • 2 teaspoons Genies Dream Clearly Not Vanilla
  • 1 Tablespoon Genies Dream Red Velvet Emulsion

Mix until well blended, then slowly add in dry ingredients you have whisked together in a bowl 

  • 3 cups of all purpose flour
  • 1/4 cup buttermilk powder
  • 1/4 cup Genies Dream Garnet Reserve Cocoa (sift into the flour first to prevent clumping) 
  • A pinch of salt 


Mix till it comes together well 

I usually wrap the dough in plastic wrap and chill for about 15 minutes to avoid having to use any extra flour to roll it out 

Roll between 2 sheets of parchment to your desired thickness 

Preheat oven to 375 

Bake just until no longer shiny on tops

For 1/4” check at about 7-8 minutes

For 3/8” check at 10 minutes

Then monitor by the minute until done  do not overbake cookies made with cocoa or they will dry out quickly and become hard
